Grilled Flank Steak with Chimichurri

Camping and grilling are two of my favorite things.

Steak - Salt the steak graciously on all sides. When you are ready to grill add the oil.

1/2 cup oil of choice, plus more for the grill

Kosher salt and freshly ground pepper

2 pounds flank steak 

  1. Preheat a grill to high and oil the grates. Grill the steak 3 to 5 minutes per side for medium-rare. Transfer to a cutting board and let rest 5 to 7 minutes, then slice against the grain. Serve with chimichurri sauce.


Chimichurri

Even though chimichurri requires fresh herbs, most of the other ingredients are common pantry staples. Chimichurri is made of these ingredients: 

  • Fresh parsley and cilantro for freshness

  • Red onion for aromatic flavor

  • Fresh garlic for pungent flavor

  • Extra virgin olive oil for fat

  • Apple cider vinegar for acid

  • Crushed red pepper flakes for heat

  • Water, salt, and pepper
